Here are some Superbowl recipes where at least some if not the majority of the ingredients can be found at this weeks farmers market.
- 20 creative and delicious pumpkin pie recipes. We still have some pie pumpkins but even when we run out, did you know you can use Butternut Squash or Acorn Squash as a substitute? This article I wrote back in 2012 lists 15-20 different variations of the pumpkin pie theme from the very healthy to the very decadent.
- Exotic cheesy acorn squash and leek dip. This is a keeper. Perfect for entertaining and easy to make. The main ingredients are still readily available at the farmers market.
- Healthy Mac'n'Cheese with Butternut Squash. How about some healthy comfort food to take the edge off before the game. The butternut squash makes a creamy and low calorie addition to this traditional favorite.
- Extraordinary Chicken Salad. This recipe uses dark meat and curry, but white meat is fine too. Try Misty Meadows chicken from Paul and Lela Wiens it is extraordinary. That is where we get our chicken, but I'm sure other Farmers market vendors are just as good. Celery for the chicken salad crunch is out of season. Try some finely dice cabbage instead.
- Shallot carrot and Parmesan fritters. This is nice.
- Potato leek soup potage parmentier.
- Brians corn bread and poblano recipe.
- Salsa goes well with the super bowl. We have Cherry Tomato Salsa, Roasted Roma Salsa and Brandywine Heriloom Salsa, and Green Salsa Verde (HOT)
- Cole slaw and BBQ were made for each other. We have an excellent supply of cabbage, carrots, and onions. Here are 7 recipes we developed this fall, there is something for everyone in this list.
- Coleslaw with roasted cabbage. A roasty toasty twist of the traditional recipe.
- Coleslaw southern style creamy. I like this one.
- Coleslaw curried. An exotic version of the old favorite.
- Coleslaw Waldorf. Lots of fresh apples at the winter market.
- Coleslaw sweetnsour. Goes well with BBQ.
- Coleslaw old fashioned country. A traditional recipe.
- Coleslaw Pine Island Catholic Church. A heritage recipe from Pine Island.
