Coleslaw - Easy Farmers Market Recipe

Even though it is late in the season we still have all the fresh ingredients for this fresh cole slaw at our farm stand at the local farmers market. Come see us on January 10 at the next market.

I like this recipe because it has a fine texture and is sweet without sugar,

  1. One head green cabbage that has been finely shredded. You can do this by hand or in a fool processor or mandoline.
  2. Two large carrots, coarsely grated
  3. Small onion diced
  4. 3/4 cup mayonnaise
  5. 2 tablespoons sour cream or greek yogurt
  6. 2 tablespoons stevia (sugar sugstitue)
  7. 1 tablespoon dry mustard
  8. 2 teaspoons celery salt
  9. Sea salt and ground pepper to taste
  1. Combine finely shredded cabbage and carrots in a large bowl.
  2. Prepare dressing by combining mayonnaise, sour crean, onion, sugar, vinegar, mustard, celery salt, sea salt and pepper in a small bowl, then combine with the cabbage and carrot mixture.
  3. Mix well and let sit for an hour to combine flabors.
