It never ceases to amaze me how much winter cold our kale plants can take. We had an extremely cold November and early December with temperatures near zero for several days. We picked quite a bit of kale before then and thought the rest of the crop lost.
But that was not to be....
I went out to survey the realm on a few warm days right before the last winter market in December and micracle of micracles I found most of the remaining kale in marketable condition. We picked several tubs of kale and it was in great shape.
I think our kale has exceptional frost resistance because of the minerals we put in the soil and the compost we use on our crops. The minerals also give it exceptional sweetness and tenderness. The sweeter the kale the better it is to promote health and vitality.
