Dilly Bean - Pickles

We have a good crop of beans and a good crop of dill right now. You put the two together and you have "dilly beans".

This recipe is for pickling the beans so you can use a simple water bath canner.

Here we go...


Ingredients:
  1. 4 boxes of green beans, about 4 pounds
  2. A bunch of dill heads or dill weed
  3. Two heads of garlic
  4. 3 cups vinegar
  5. 1 cup water
  6. One medium onion cut into thin rings
  7. One Jalapeno Pepper (optional)
  8. 1 tabelspoon mustard seed
  9. 8 pint canning jars and lids
Directions:
  1. Sterilize jars and lids. Get water bath boiling
  2. Mix vinegar, water and mustard seed. Bring to a boil.
  3. Pack jars with beans, garlic and onions (leave 1/4 inch head room) Turn jars on their sides to stack beans evenly.
  4. Pour hot liquid over vegetables (leave 1/4 inch head room)
  5. Bring water bath back to a boil. Make sure jars are covered by 1/2 inch of water. Process for 10 minuts.
  6. I any jars don't seal, put in refrigerator and use within several weeks.
  7. Enjoy
