This recipe is for pickling the beans so you can use a simple water bath canner.
Here we go...
Ingredients:
- 4 boxes of green beans, about 4 pounds
- A bunch of dill heads or dill weed
- Two heads of garlic
- 3 cups vinegar
- 1 cup water
- One medium onion cut into thin rings
- One Jalapeno Pepper (optional)
- 1 tabelspoon mustard seed
- 8 pint canning jars and lids
- Sterilize jars and lids. Get water bath boiling
- Mix vinegar, water and mustard seed. Bring to a boil.
- Pack jars with beans, garlic and onions (leave 1/4 inch head room) Turn jars on their sides to stack beans evenly.
- Pour hot liquid over vegetables (leave 1/4 inch head room)
- Bring water bath back to a boil. Make sure jars are covered by 1/2 inch of water. Process for 10 minuts.
- I any jars don't seal, put in refrigerator and use within several weeks.
