Coleslaw - Southern Style Creamy

This cole slaw goes well with smoked meats. I made some great baby back ribs in the smoker and this supplied the vegetable balance for easy digestion and a light side dish.

We still have all the ingredients to make this delectable dish at the farmers market.
Enjoy.



Ingredients:

  1. A medium size green cabbage, finely shredded
  2. Two large carrots, shredded
  3. One small red bell pepper.
  4. One small red onion, diced.
  5. 1 cup Greek yogurt
  6. 2 tablespoons apple cider vinegar
  7. 3 tablespoons sugar or stevia (I prefer stevia)
  8. 1/2 teaspoon sea salt
  9. 1/4 teaspoon white or black pepper
  10. 1/4 teaspoon celery seed
Directions:
  1. Combine the vegetables and mix well
  2. Combine the dressing ingredients and mix well
  3. Pour dressing ove rthe cabbage mixture and coat well
  4. Cover and rest in a refrigerator for 1-2 hours before serving.
  5. For a variation use sliced apples.
