Coleslaw - Curried

I like curry, which is a little out of place in Minnesota, given its Scandinavian roots. This slaw combines winter vegetables and the tastes of SE Asia.

It features a sweet curry from Penzey's Spices located Wauwatoa, WI. Bill Pensey blends spices from all over the world and has stores all over the US. I just mail order most of what we use. Pensy spices are the freshest and boldest I have found.

Ingredients:

  1. One small green cabbage, finely sliced.
  2. One large shredded carrots.
  3. 4 green onions or small sweet onion
  4. 2 cups red apples cored and diced 1/4 inch pieces
  5. 1/2 cup cranberries
  6. 1/4 cup peanuts, roasted
  7. 1/2 cup light mayonnaise
  8. 1/4 cup lime juice
  9. 1 tablespoon Penzey's Sweet Curry powder
  10. 1/4 teaspoon ground tumeric
  11. 1 dash of cayenne pepper
Directions:
  1. Blend the dressing ingredients together
  2. Vegetables together
  3. Toss vegetables with dressing
  4. Let stand for at least and hour before serving for the flavors to develop
