Coleslaw - Sweet'n'Sour

I have a friend that is considering starting a business when he retires doing catering with smoked and BBQ meats as his specialty. He has been experimenting with various side dishes that go with this type of food. I asked him for his cole slaw recipe and have made a few modifications for my taste.

He does a great job on the meat side of things too.

Ingredients

  1. A medium green cabbage, finely chopped cabbage
  2. One very small red onion
  3. 1/2 bell pepper, red, green or orange
  4. One large carrot, grated
  5. One tablespoon white sugar
  6. One tablespoon brown sugar
  7. One teaspoon mustard seed or powder
  8. 1/2 teaspoon sea salt
  9. 1/2 teaspoon black pepper
  10. 1/2 teaspoon celery seeds
  11. 2 tablespoon olive oil (do not use vegetable oil)
  12. 1/4 cup organic distilled white vinegar (you could also use cider vinegar)

Directions

  1. Chop and mix vegetables.
  2. Mix ingredients for dressing.
  3. Mix caggage mix and dressing thoroughly.
  4. Let stand for at least and hour for the flavors to blend, mix occasionally
For more a more sipcy slaw add a finely diced jalapeno.
