The nice thing about this recipe is you can still get all the vegetables at the farmers market.
Ingredients:
- One medium head of cabbage
- One large shredded carrot.
- One very small onion diced finely.
- 1 cup Greek yogurt
- 3 tablespoons lemon juice
- 2 tablespoons sugar (or stevia)
- 1/2 teaspoon sea salt
Directions:
- Combine vegetable ingredients and mix well
- Combine dressing ingredients and mix well
- Add dressing to cabbage mixture and stir well
- Let set for at least an hour to combine flabors before serving.
Goes well with fish, pork and chicken.
