By the time this is posted we will have cilantro in the garden. This is a cold salad with a black rice, bean and lentil base. Very inexpensive and good for you. Lots of fiber and Glutin free.
Here is the recipe...
Ingredients:
- 1 cup black rice cooked, (1wo cup rice, 2 cups water, simmer for 40 minutes)
- Black beans, cooked, 1 cup
- Lentils, cooked, 1 cup
- Two bunches of cilantro (or 1 bag of Petersen's cilantro leaves) Finely chopped
- 1/2 bottle yogurt based South West dressing
Directions:
- Mix rice, beans, lentils and cilantro
- Mix in dressing
Let sit for an hour.
