Sun Dried Tomato Flax Crackers

We have some great dried tomatoes at winter market that I smoked with apple wood. I used these tomatoes and some fresh flax seed to make some delightful dried but raw crackers.

Here are the directions.


Ingredients:

6 cups fax seeds
6 cups water
1 cup sun-dried tomatoes
1 garlic clove
1 celery stalk
2 tsp Italian Herbs
2 1/2 cups diced tomatoes
1 1/2 tsp salt

Directions:
  • Soak sun-dried tomatoes in water for 2 hours or until soft
  • In a food processor mince garlic, celery, herbs and salt
  • Add sun-dried tomatoes (drained) and puree well.
  • Process fresh tomatoes to a saucy and slightly chunky consistency. Add to sun-dried tomato paste and mix well until combined.
  • Soak flax seed in water for 4-6 hours or until all the water is absorbed
  • Add tomato mix to flax and mix to combine
  • Spread flax and tomto mix about 1/4 inch thick on dehydrator fruit leather trays. Mark puree after spreading on the trays with the dull side of a knife to mark crackers.
  • Dehydrate at 108F for about 12 hours
  • Flip onto mesh low stick sheets and continue to dehydrate at the same temperature for another 24 hours or until crispy dry.
  • Break into cracker sized pieces and put into zip lock bag.
