Most of the leeks you see in the stores today are short and stubby. The reason the commercial varieties are like this is because they fit the shelf of the typical produce section.

There are many leeks that grow a long elegant shaft and have 2-3 times the useable quantity of leek. This is the type of leeks we grow and our customers love them.

It doesn't seem to matter the diameter of the leek. They are tender and flavorful at any size.

For making potato leek soup the leeks are going to be cut into medallions and cooked thoroughly. The longer shank and smaller diameter of our leeks is just what the doctor ordered for soups and cooking.
