Healthy Mac 'n' Cheese with Butternut Squash and Spinach

The flavors of fall can be blended in many ways. Macaroni and Cheese is a perennial favorite. The addition of squash and spinach adds a delightful twist to this old standby.

  1. 2 cups butternut squash cooked and pureed
  2. 4 cups fresh spinach
  3. 1 medium onion cooked.
  4. 1/2 pound elbow or spiral pasta cooked
  5. 4 ounces smoked Gouda cheese
  6. 8 ounces cream cheese
  7. 4 ounces sour cream
  8. 4 ounces of milk
  9. 8 ounces bread crumbs
  1. Combine Gouda, cream cheese, sour cream and milk into a creamy sauce
  2. Mix in butternut squash, onions and spinach until mixed well
  3. Mix in cooked pasta until well coated
  4. Cover with bread crumbs and bake at 350F for 15 minutes or until lightly brown
